How to make/cook simple okro soup
INGREDIENTS:
· bowl of finely chopped okro
· Beef meat (or goat, if you like. If none, replace with chicken or turkey)
· shaki and cow skin
· 2 frozen mackerels of a medium size
· Smoked fish or/and dried fish (as you like to your taste)
· 1 to 3 cubes of Maggi (to your personal taste)
· Salt and pepper
· Palm oil
· onion
· ground crayfish
· Shrimp/prawn(your choice)
· Any green vegetable of your choice. (I use spinach)
PROCEDURE
1. Cook shaki and cow skin(ponmo)
2. Add your preferred meat(I use goat meat) to the pot of already cooking shaki and ponmo, add some chopped onion, your preferred seasoning and salt to taste. Cook till meat is tender
3. Add fresh fish and cook for 5minutes. After 5 minutes take out the fish, place in a neat bowl and keep aside.
4. Add pepper, crayfish, already cleaned shrimp or prawn and dry fish to the boiling pot.
5. Also add 4 tablespoon of oil and let it cook for 5 minutes
6. Add a cup of hot water to the chopped okro and stir with your wooden spoon till you get the slimy texture
7. Add the okro to the cooking pot and stir, add your fish.
8. Add 1 more Maggi cube and taste for salt. (season to your satisfaction)
9. Let cook for 3 more minute and turn off the heat. let it simmer
Serve with your preferred swallow.
