How to cook/make/prepare Egusi soup without frying



To make a delicious Egusi soup you will need the following:

INGREDIENTS

· Egusi/melon seeds

· Meat e.g goatmeat, smoked turkey, cow meat e.t.c

· Fish(I prefer mackerel)

· Crayfish

· Bitterleaf

· Palmoil

· Knorr cubes

· Onion

· Bell pepper

· Chilli

· Salt to taste.

PROCEDURE

1. Peel and chop the onion. Cut the meat into small pieces, add ½ of the chopped onion and one knorr cube.water and let it boil. Keep on cooking until the meat gets tender. When done, set the meat aside.

2. Grind the Egusi seeds, Set the mixture aside and in the meanwhile, blend the bell pepper, ½ of the onion.set this mixture aside.

3. Place a clean pot on the stove and turn it on to low heat(let the pot dry completely before adding oil)

4. Let the oil heat-up and add some chopped onion, cook for 30seconds and add the blended Egusi and cook on low heat till the water completely dries up, set this aside.

5. Add the blended ingredients to the meat cooking (bell pepper,chilli , crayfish)

6. Add knorr cube and salt to taste (you may also use your preferred seasoning)

7. Also, add the fish and let cook for about 5minutes before adding the Egusi, cover and let cook for 6minutes

8. Stir carefully and add the already washed bitter leaf. Stir and let it cook for 2minutes before turning off the heat.
